Tomorrow, September 16th is Mexico’s Independence Day ??. So I thought I’d celebrate with a yummy recipe for Horchata Pancakes! Horchata is a popular rice and cinnamon drink in Mexico. Read more on Horchata here. Below is a short post on these easy, but so sweet pancakes in honor of Independence Day for Mexico.
I used this Rica Horchata brand for my pancakes. I usually get it at Target, but I’ve also purchased it in other latin markets around the city. Here is a recipe for a homemade Horchata, if you are interested in going all out!
